Valentine's Day, the day of love, is here. I like to think of love as the supreme currency of the universe. The energy that has the power to transform hearts, minds, and work toward the highest good for all. While we don't need an excuse to celebrate love, it's nice to get into the spirit of the day, offering a small gesture to a loved one whether it be a lover, friend, or family member, or even better, practising self-love, by doing something for yourself that speaks to your heart and soul.

 

To celebrate the day, I whipped up these chewy Almond and Maple Heart Cookies this morning to share with Dan and the team. Spiked with Rose and Cordyceps they’re one of my favourite lust-worthy recipes and perfect for spreading a little love. 

 

Cordyceps is the ultimate medicinal mushroom to get the inner fire burning not only famed for cellular energy production but has long been linked to supporting libido and sexual energy making it the perfect mushie to share with a loved one. Libido is often a topic we shy away from talking about. However, low libido can often be a reflection of our overall energy reserves which is why Cordyceps has long been revered as a potent sexual health tonic. Ingredients

2.5 cups natural almond flour

1 tbsp Inner Atlas Cordyceps

½ tsp sea salt

¼ tsp baking soda

½ cup maple syrup

½ cup coconut oil

1 egg or egg replacer works well also

1 tsp vanilla extract

1 tsp rosewater extract

4 tbsp rose petals

Sprinkle of bee pollen

 

Method

Preheat fan forced oven to 180°C.

Cover a large baking tray with baking paper and set aside.

In a large mixing bowl combine dry ingredients; almond flour, Cordyceps, sea salt and baking soda.

Add wet ingredients; maple syrup, coconut oil, egg, vanilla extract and rosewater extract. Stir vigorously until well combined. 

Add 3 tbsp of rose petals and fold gently through the mixture.

To create a classic round cookie shape use a tablespoon to portion the cookie mixture across the baking paper leaving at least 2 cm between each cookie to allow room for them to expand.

If you have heart-shaped cookie cutters or any other shape for that matter, place the cookie cutter on the baking tray and spoon the cookie mixture inside the cookie cutter, pressing it out evenly toward the edges. Lift the cookie cutter leaving the mixture on the tray and repeat.

Sprinkle the remaining rose petals and bee pollen across the cookies.

Place in the oven and bake for 20 minutes.
